Healthified McMuffin =) Pretty sunny-side up egg, (leftover) chicken and grated cheese in spinach pancakes (spinach, chia egg, oat flour, salt).

Carrot Cake Protein Pancakes1/3 cup old-fashioned rolled oats1/4 cup low-fat greek yogurt 1 small banana2 egg whites (or 1 egg)1/4 tsp baking powder1/4 tsp cinnamon powder1/4 tsp vanilla extract 1/4 cup shredded/grated carrots1-2 tsp chia seeds1 Tbsp coconut flakes (optional)1 Tbsp raisins (optional)1. Combine first 7 ingredients (from rolled oats to vanilla extract) in a blender or food processor and blend until smooth.2. Transfer to a bowl and stir in last 4 ingredients. Leave for about 5 - 10 minutes.3. Cook as regular pancakes. Makes three 1/4 cup pancakes.4. Top with whatever you want and enjoy! =)

Clean Eating Moussaka - My meal prep for week 4. =) Everything from scratch. The filling is a mixture of ground chicken and mushroom. The Béchamel sauce is made with fresh coconut milk + spices. =)
