Meal Prep: Whole Wheat & Spinach Pancake Burger
Pancakes, Laughing Cow Cheese, cabbage, patty (ground chicken, mung beans, mushroom & oats), tomato & egg.

Pretty sunny-side up egg, (leftover) chicken and grated cheese in spinach pancakes (spinach, chia egg, oat flour, salt).
Carrot Cake Protein Pancakes
1/3 cup old-fashioned rolled oats
1/4 cup low-fat greek yogurt
1 small banana
2 egg whites (or 1 egg)
1/4 tsp baking powder
1/4 tsp cinnamon powder
1/4 tsp vanilla extract
1/4 cup shredded/grated carrots
1-2 tsp chia seeds
1 Tbsp coconut flakes (optional)
1 Tbsp raisins (optional)
1. Combine first 7 ingredients (from rolled oats to vanilla extract) in a blender or food processor and blend until smooth.
2. Transfer to a bowl and stir in last 4 ingredients. Leave for about 5 - 10 minutes.
3. Cook as regular pancakes. Makes three 1/4 cup pancakes.
4. Top with whatever you want and enjoy! =)
